Little lobsters with “carciofini” preserved in oil “Nesti”

INGREDIENTS:

  • 4 little lobsters
  • Salt
  • ½ roasted chicken
  • Some lettuce leaves
  • 1 tube of mayonnaise
  • Pepper
  • 1 spoon of “salsa rubra” (ketchup Italian style)
  • 100 g of green stuffed olives
  • 4 boiled eggs
  • 100 g of “carciofini” (little artichokes) preserved in oil Nesti
  • 1 sliced lemon

PREPARATION

Boil the little lobsters in hot water with salt and cook them for about 30 minutes.
In the meantime, bone the roasted chicken (this can be also bought already prepared), remove its skin and cut it into thin slices.
Blend the chicken slices with some lettuce leaves well washed, cut the mixture in strips and season with mayonnaise, pepper, “salsa rubra” carefully mixing all the ingredients.
Take a large serving plate and spread a layer of the mixture obtained on the basis.
In the centre of the plate put a whole leaf of lettuce to contain the stuffed olives.
Lay on the plate the four boiled little lobsters, the boiled eggs divided into segments, the “carciofini” preserved in oil and the lemon slices.
Serve immediately or store in a refrigerator until serving.
